Lauren is the creator behind the successful vegan food blog Lauren Caris Cooks, whose aim is to use whole foods, which are seasonally sourced to prepare easy and quick meals. After moving to Switzerland in 2014, she came to a realisation that supermarkets there weren’t stocked with an infinite range of produce. She had to adapt, be smart and cook with what was in season. Her creative talent has led to some drool worthy meals including Marinated Pumpkin Quinoa Salad, French Toast with Caramelised Banana and Berries and Chocolate and Ginger Cupcakes. Not only does Lauren develop the recipes but is also the food stylist and photographer.
